12 large garlic cloves on tiny slices
1 cup fresh basil leaves
Extra-virgin olive oil
3 big eggplants cut into rings
Salt to taste
3 large onions sliced on rings
3 red bell peppers cut into rings
3 medium zucchini sliced on rings
Freshly grounded black pepper
Parsley
4 large tomatoes

Slice the eggplants on rings, add salt and leave them in a pan for 30 minutes. Through the liquid, wash and dry them a bit.Take a baking pan and cover the bottom with olive oil, start covering it with all the products as shown on the picture. Spread the basil, black pepper and salt. Cover with some more olive oil and bake until its left only on oil. The same meal can be prepared on a pot instead of oven. Than chop all the products on cubes and stir occasionally.
